A Cook's Diary

Thanksgiving dinner seemed to be a rousing success this year. Actually it felt a little blah all that planning and cooking devoured in sixty minutes? No worries though, we had plenty of leftovers. I've already made two different turkey dishes. Just for fun here is a little run down on my preparations for Thanksgiving day.

Wednesday Afternoon
Accomplishments for the day were making the #10 of potatoes. A sweet potato dish, 2 pies and gravy. I also cleaned house and made peppernuts with my cousin. At 4:30 I'm feeling very thankful that mom is bringing pizza for supper. Five o'clock, I'm reflecting on the glorious sunset. I feel filled with peace. Later that evening after the Thanksgiving service my brother Ben is home for the holiday's. He compliment's on my outfit. Yes I know he's the best.

Thanksgiving morning.

I rise and drink my protein smoothie, must have energy today! I exercise on my trampoline while watching how to cook turkeys on Good morning America. This was important. The exercise part that is, who knows how many calories I consumed on turkey day. By now the time has come to put our eighteen pound bird in the oven. Wednesday morning I had soaked it in a salt brine to ensure juiciness. I put two gallons of brine over the bird I estimated to my brother that it weighed forty pounds. I implored him to carry it to the kitchen from the basement fridge. He muttered that it was very heavy. As I'm preparing the turkey for the oven I'm struck by the thought that garlic would be a lovely edition. Mom picks it fresh from the garden in Martha Stewart style. My dear brother washes and minces it for me. Twenty minutes later the kitchen smells very Italian. Ben reminds me that he told me not to put on too much garlic.

I spend the rest of the morning lounging around and plugging in crackpots. Everyone is eating and passing out compliments by twelve thirty. I feel thankful for such a gracious family:) Everyone found room for at least two pieces of pie (small of course).

No one has complained yet about the abundance of turkey dishes I'm serving. Interestingly enough mom and I found a turkey on sale. So the dishes won't be ending anytime soon!

My Thoughts, Someone else's Words

I stood unmoving watching the glorious sunset. Many thoughts floated through my mind, I could write them for you here. Instead though I will direct to you another young lady that watched the same sunset. She was in another state hundreds of miles away. She is living a journey far different than mine. However we both are pressing toward the same goal, glorifying our Lord and Savior. Reflect on your own life as you read her reflections.

Praise God from Whom all Blessings Flow

Today is Thanksgiving, the day to count your blessings. While I see so many blessings often I find it hard to Thank God for everything. I choose today to thank God for all His blessings even the hard one's.

I will see the twenty 3rd grader's that are always talking, who I teach Bible class to as blessing because I'm one the only link they have to the God.

I will see the house that is so clean now but will be dirty so quickly as a blessing because I have family to dirty it.

I will see the pile of dirty dishes as a blessing because they testify that we had food to eat.

I will see the busyness of life that threatens to wear me down as a blessing because it means I have opportunities to minister.

I will see the burned bread as a blessing because we had wheat to make bread.

I will see every hardship as a blessing because it only brings me closer to God.

My Lover

Thanksgiving is just around the corner. Just a few days before my favorite holiday I will be 18 for 6 months. Oh what a momentous 6 months it has been. Had I known the trials and growing pains I would have spiritually I might have been tempted to denounce my birthday. However I turned 18 and the rough times came. I'm so thankful to God that they did. I praise for His loving kindness in giving me those hard times.

I knew God loved me...
When I was overwhelmed and thought nothing would get done, God gave me the energy to press on.
When I struggled with a very deep emotional thing important to only me and He showed me it was important.
When He gave me a sister
When I had no physical strength and God gave me just what I needed.
When others saw my pain and showed they cared
When every night the sunset displayed His awesome glory
When I cried the tears of desperation felt utter hopelessness and doubted His love. God loved me.

Tough times are still coming my story isn't over yet. And God hasn't stopped loving me.

The Family Nobody Wanted; Revisited

Note, I wrote this positive review based on my feelings from the book. However I realized there is more to the story. Thus I'm adding a disclaimer to the book I so eagerly recommended earlier. I have now added to my positive review of the book a negative one as well. Please read both.

Funny, sad, compelling, urging; is what best describes this heart warming story of "The Family Nobody Wanted".

You will find in this true story a poor young married couple. She desperately wants a child, doctors give little hope for that happening. So they adopted a little boy. Of course the little boy needed a brother but three sisters came instead. When finally a little brother came it just wasn't the right "size of me" so they adopted some more. Before the Dosses knew it they had adopted 11 children. While the unsocial grace of having so many children contributed to their title as "the family nobody wanted", there was another reason. Every single one of their children was a different nationality. Most of them were of mixed races. Reverend Doss and raised his family in the 50's where there was the women's, men's and "colored"bathrooms. Understandably many people were horrified at the family.

You will read about the cute antics of the children, their little sayings, the things they did that made their mother nearly tear her hair out. Ladies aid society's that frowned upon their minister's large family. Newspaper reporters always on their doorsteps. All these components make for a very interesting story.

The other side to the story...
Helen Doss as it is very evident in the book lacks a attitude of submission towards her husband. Always is it her idea to adopt one more, dragging her husband into it. Nowhere is prayer between the couple shown as should be done before adopting. Sadly after the last page was written in the book the couple divorced. Many of the children would have been still young, suffering the devastation.

The book paints a loving warm picture. Unfortunately I don't think that was always the case. Especially as the children grew older. Such families who adopt children go through a lot. We must remember to pray for them.

Do I still recommend the book? You have seen my positive and negative view, you may decide whether it is worth your time.

Thanksgiving Sweet Potatoes

Thanksgiving! I have to say is my favorite holiday, because you get to cook up a storm! I first cooked a Thanksgiving meal when I was 16, this will be my third year at planning the meal. I absolutely love it! While I do enjoy the cooking and preparation of the meal I don't like to do it on Thanksgiving day. Yes that's right I make the whole dinner the day before. With the exclusion of the turkey.
I find that nearly all of my dishes lend themselves well to preparing ahead of time. You will see me go as far as to freeze the dinner rolls and bake them the day of. My world famous sweet potatoes (or at our church anyway) lend themselves particularly well to advance preparation. While I find myself only making them on Thanksgiving, my sister tells me they grace her table more often. Sweet potatoes are always a treat whenever you eat them especially in this way...

Bethanne's Sweet Potatoes

1 1/2 pounds sweet potatoes
1 pound tart cooking apples (I just used red delicious)
5 tablespoons brown sugar
1/4 teaspoon cinnamon (I like to use more)
1/2 ginger
4 tablespoons butter, diced
Bake the potatoes in their skins for thirty minutes at 400 degrees
(or until done)Peel them and cut them into thin slices. (sometimes I cook the potatoes the day before). Core and peel the apples and slice them
thin. Mix three tablespoons of the sugar with the cinnamon and ginger. Butter a casserole dish ( 8 by 8) with one tablespoon of the butter and put a layer of sliced apple into it. Sprinkle a little of the sugar spice mixture and bits of the dice butter over them. Cover with a layer of sliced potatoes, sprinkle them with some of the sugar spice mixture and dot with butter. Continue layer apples and potatoes as above until all are in the casserole. Sprinkle with the remaining two tablespoons of sugar. Cover and bake at 350 degrees for 40 min. or till tender. Serve hot

Pray for the Orphans

In the next few days you will see writings on care of orphans. Specifically in adopting. I realize though that not everyone of us is not called to adopt or able. There are other ways you can help. I will be giving some more suggestions on how to do this. Please though remember the orphans in your prayers. Watch this video, I think you will be challenged.

My Secrect Adict; Or Maybe not so Secrect

I love chocolate. Taken that I also love cooking it's not hard for me to come up with an excuse to make a chocolate recipe. I even plan chocolate parties and chick flick's of course!
Here is one of my favorite recipes. Being myself I couldn't make the recipe as is but had to change to suit my time and tastes. Enjoy!

Brownie part

Make a brownie mix or use this recipe.

Chocolate cake mix
1 egg
1/3 cup oil
Blend all together and press into a 9x13 pan. Bake for 15-10 minutes @ 350 degrees. It's tricky to know when it's done because of the dark color. I probably could have baked them a little less.

MINT CREAM Topping: Combine 2 cups powdered sugar, 1/2 cup (1 stick) softened butter or margarine and 2 tablespoons green creme de menthe (OR 1 tablespoon water plus 1/2 to 3/4 teaspoon mint extract and 3 drops green food color may be substituted for creme de menthe) in medium bowl; beat until smooth.

I drizzled the top w/ chocolate syrup however the recipe has a yummy chocolate topping.

Original Recipe.


Chocolate Mint Dessert
Ingredients:

* 1 cup all-purpose flour
* 1 cup sugar
* 1/2 cup (1 stick) butter or margarine, softened
* 4 eggs
* 1-1/2 cups (16-oz. can) HERSHEY'S Syrup
* MINT CREAM CENTER(recipe follows)
* CHOCOLATE GLAZE(recipe follows)

Directions:
1. Heat oven to 350° F. Grease 13x9x2-inch baking pan.

2. Combine flour, sugar, butter, eggs and syrup in large bowl; beat until smooth. Pour batter into prepared pan.

3. Bake 25 to 30 minutes or until top springs back when touched lightly in center. Cool completely in pan on wire rack. Spread MINT CREAM CENTER on cake. Cover; refrigerate. Pour CHOCOLATE GLAZE over chilled dessert. Cover; refrigerate at least 1 hour before serving. Cover; refrigerate leftover dessert. About 12 servings.

MINT CREAM CENTER: Combine 2 cups powdered sugar, 1/2 cup (1 stick) softened butter or margarine and 2 tablespoons green creme de menthe (OR 1 tablespoon water plus 1/2 to 3/4 teaspoon mint extract and 3 drops green food color may be substituted for creme de menthe) in medium bowl; beat until smooth.

CHOCOLATE GLAZE: Melt 6 tablespoons butter or margarine and 1 cup HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips in small saucepan over very low heat. Remove from heat; stir until smooth. Cool slightly.

Reading by the Hearth

Crackles rang from the wood stove. Fire was devouring the wood inside. Efficiently providing heat for the cool fall afternoon. Beyond the faint sounds of the fire I listened to my aunt read aloud. Though I heard the story before soon was I caught up in it. Hearing it for the first time all over again. Memories swept me down a deeper path of my childhood.

Reading aloud on winter evenings has been a favorite pastime for our family. Dad was most often the appointed reader. Missionary biography's spilled trilling tales and amusing stories. Historical biographies proclaimed daring feats. Escapades of "Little Britches" will never be forgotten. Nothing seemed more comforting then hearing dad read those stories. I don't know who was more caught up in them. Dad or us children.

They say reading aloud builds a interest in reading for children. However I believe a deeper stronger interest was instilled in my brothers and I. All three of my brothers went on do some form of mission work. I wish to follow in their footsteps. Summarizing maybe I am, but just maybe all those missionary biography's had an impact on our lives.

Never have I felt so blessed as I heard the stories of persecution our ancestors went through. Escaping Germany and Russia and nearly starving. Such stories reminded me of God's mercy.

Long after my brother's left home mom continued the tradition. Reading aloud was simply a part of my school each day. No secret is it that I'm a secret of admire of "Anne of Green Gables". We do share the same name after all. Please don't forget the "e".

Imagine me with red hair and I'd like to think I'm Anne. Writing her dreams and imagination into stories. Only I use a keyboard instead of a pen. I've never won a baking powder contest. However I am "published" on the World Wide Web.

Winter evenings, a good book, and a fire could all do that? Far fetched perhaps but I think that maybe they did.

Leaves are falling with the North wind. Find a good book and your family and pop the popcorn. Prepare yourself then to broaden your horizons and imagination.

Lessons Learned from the Sabath

Today of all days on the Lord's day I felt depressed and whiny. Quite easy was it to compile a list of reasons to complain in my head.

I didn't clean the house for Sunday
I didn't make dinner for Sunday
I have to teach Sunday school
I didn't get to talk with my friends enough
I wasted the day doing up peaceful things

Needless to say my spirit is heavy laden tonight. When the lunch dishes needed washing. I felt I was entitled to rest. However leaving them for someone else to do did not make for a peaceful day. God used a something small to remind me of the joy of serving others. Special treat was given to me today. I got see a friend I rarely see. Just to see her bright smile assures me she cares for me. Blessed I am by her friendship. Reminder that God loves me.

Perhaps the best lesson was learned as I felt down and depressed. My memory pointed me to the Sunday school lesson that I did not want to teach. Our lesson had been on "the woman at the well" (John 4). Jesus gave her living water and has given it to me. My soul craves it. I ran for my Bible this evening to drink it up.

How can I doubt God's love? Who else would have cared to show me so many lessons?
Before this Sabbath is over I must to spend time with my true love. Yes the one who died for me.

Mutiple Birthdays

Recently we celebrated my dad's birthday with my family. Carrot cake, dad's favorite, was on the menu. I also made another kind of cake. Two of my nieces received the responsibility of putting on the candles. I gave them all our candles. Apparently they thought they all needed to be used. Both cakes were nearly ablaze!. In fact we saved on our electric bill for awhile because lights just weren't necessary. My five year old niece described it best when she inquired "is it every one's birthday"?

Election Day; The day I Knew God was in Control


My heart felt heavy as I prepared for bed. Certainly I felt that Obama would be the next president of United Sates. Not for a moment did I doubt the power of God. Yes still He could put a righteous leader in power. Sadness overwhelmed me though as I thought of the implications of having Obama as president. Would the dark speculations of people come true?
I turned to Psalm 37, the words could not be more timely for Christians in the United states. Doubt of God and His power that lies in your heart will quickly be removed. Wicked shall be overthrown and the righteous will reign. Suddenly I was filled with joy. I have an eternity to look forward to with my Lord Jesus Christ. What can a season of hardships do to me? Nothing! I knew I have a challenge. I must proclaim the word of God with my month. Telling those around me where real hope lies. Politicians will only be around for season. I may not be here all that much longer either. However my Lord Jesus Christ will always be waiting for His people to turn to Him. Such a responsibility was given to me to share that news. We are called for a much higher purpose then to whine about politics. Joy should be ours as we look toward to our eternal reward.

The LORD knows the days of the blameless,
And their inheritance will be forever.

Deep was the sleep that I was awoken out of at 2:30 am. I wondered upstairs and turned on the TV. Obama had won. Anger filled my heart as before. I had to plead forgiveness to my Lord. Later I lay in bed sleep would not visit me. Instead I prayed. I don't remember what I prayed, just that I prayed. More that ever our nation needs prayer. Thousands upon thousands voted for Obama. Prayers must be sent in those same numbers. Our new president will need them whether he thinks it or not. Pray for our new president and his family. Pray for our nation. Pray for are other leaders in authority over us. Pray for the church that they will turn to God in prayer.

O LORD, hear my prayer,

in your faithfulness and righteousness
come to my relief.

My Prayers and Votes Will Count

I cast my vote today. I put my support in a forceful way behind the candidate whom I believe should be president.
Years of going to the polls with my parents have built excitement. Just months after my 18th birthday I was the one to punch the buttons. I felt a thrill shoot through me as I voted for the president. Double checking carefully to make sure the right one had been recorded.
I'm not shy in saying who I voted for. John McCain was top priority among other upstanding Republicans. True he has his flaws. Jesus however is not running for president. Sometimes we just have to accept people's flaws for who they are. Remembering that there is the lesser of two evils.

My part is done most would say. However it's not, just like a prayer is said before a meal. Prayers should be said in the matter of voting. Oh I beseech the throne of grace that our Lord would give us mercy. Do we deserve another upstanding president? No we don't. My God knows who I want in office. I cannot bring myself to beg and plead with a since of ungratefulness. Simply my prayer is for mercy. Act of receiving something undeserved. Which is exactly what it would be if John McCain were elected as president of the United States.

We have a weapon, casting our one vote's. Then praying. Nothing is impossible with prayer. Not even Obama's millions can stand up to that.

November


November happens to be one of my favorite month's. One of the best holiday's around comes this time of year. Daddy has his birthday. Leaves are turning. Cold weather comes, maybe not such a wonderful thing about this month.
However my favorite thing about November is that it's National Adoption month. I have a passion for the fatherless. Someday I wish to mother them all. With 130 million orphans worldwide I don't think I'll accomplish that. Forthcoming will be writings I hope that will challenge you own awareness for orphans. I believe my mission statement for this passion lies in this verse.

“Vindicate the weak and fatherless; do justice to the afflicted and destitute. Rescue the weak and needy; deliver them out of the hand of the wicked.”
